CALLOS

This dish consist of tripe, tendon and cubed sliced beef sauteed in a light tomatoe sauce.  It includes a hint of smoked flavour because the bacon and chorizo is added to infuse the dishes flavour.  Garbonzo beans make this an earthy dish.
